When you need a pick-me-up on a cold day…
This morning the City of Denver woke up to about a foot of snow. Travel was impossible… meaning today was the first true snow day of the season! If I’m rushing to work in the morning, then likelihood that I eat anything other than a “grab and go” snack is very low.
Today, work was cancelled – meaning I had time to make a breakfast that was slightly more elaborate than my typical medium boiled eggs. Maybe it’s the millennial in me, but my favorite breakfast will always be avocado toast. The toast I make is not only delicious, but on a cold day makes me think about somewhere warm…

Avocado Toast is obviously not rocket science. All you need is a ripe avocado, bread, lime, cumin, salt, and the Trader Joes Everything but the Bagel Seasoning. I don’t live near a Trader Joes anymore, so when when I go, I make sure to buy about three containers of this seasoning because it is so good!
You can use any bread you like, but I’m partial to sourdough sliced bread (even though it probably isn’t real sourdough).
While your bread is toasting, smash the avocado in bowl with a pinch of salt, cumin, and half of a lime. If your lime isn’t very juicy, then feel free to use a whole lime.
Once the toast is done, spread the avocado mixture on the toast. Sprinkle a healthy dose of everything but the bagel seasoning over the toast and you’re all set.

The lime and avocado takes me to a warm place on a cold winter morning – which was necessary today. The cumin adds depth to the avocado mixture, and the everything but bagel seasoning adds a visually appealing oniony crunch. Hope you enjoy!
